3.3 tons of kefir: Vilnius goes all-in on massive Pink Soup Festival

This weekend, Vilnius has embraced a vibrant pink hue as the city celebrates the fourth annual “Vilnius Pink Soup Fest,” a festival honoring Lithuania’s traditional cold beet soup, šaltibarščiai. Expanding to a three-day format for the first time, the event is projected to drive the consumption of at least 3.3 tons of kefir, says organizers “Go Vilnius”.

The festival’s expanded itinerary features the largest synchronized “Pink Break” luncheon to date, international culinary interpretations of the traditional dish, a Pink Soup Parade on the Neris River, a monumental 50-meter-long and 13-meter-high pink slide, and thematic installations integrated into public spaces.

“What captivates us most about this festival is its continuous evolution. A major highlight this year is the Pink Soup Parade on the Neris River, yet the ingenuity of our participants is equally striking. International guests arriving in sophisticated costumes consistently surprise us, alongside local business partners who experiment with šaltibarščiai, reimagining it into diverse culinary offerings—from pink burgers and beet udon noodles to kefir-based desserts and cocktails,” says Eglė Girdzijauskaitė, Communications Manager at Go Vilnius.

Throughout the weekend, visitors can sample global takes on the classic dish and participate in themed costume events. The festival is supported by a robust local network, encompassing 355 locations across Vilnius that offer šaltibarščiai-inspired menus, commercial activations, and events.

3.3 tons of kefir prepared for consumption

To meet the logistical demands of the event, 3.3 tons of kefir were distributed to participating vendors in advance for soup production. Organizers anticipate that local residents and international tourists will consume thousands of servings over the course of the weekend.

During the inaugural “Pink Break” at the central railway station, 400 complimentary servings were distributed to the public, followed by an additional 1,000 portions served prior to Saturday’s Pink Parade.

An “absolutely absurdly positive event”

The festival’s costume contest has become a cornerstone of the event’s cultural and tourism appeal. Enthusiasts—including a notable contingent of attendees from neighboring Latvia—will compete for the best pink costume on Saturday evening. Attire ranges from literal representations of eggs and beets to highly creative, abstract interpretations of the soup.

Connor, an attendee traveling from the United Kingdom, noted that after discovering the festival online, he perceived it as an “absolutely absurdly positive event.” This prompted him to design a ‘Pink Knight’ costume specifically for the parade. “Instead of a sword, I carry a spoon, and my shield is adorned with eggs, dill, and potatoes,” he explained.

The Vilnius Pink Soup Fest programming will continue through Sunday, featuring concerts at the Vilnius Town Hall, nightlife events at Halė Market, and widespread gastronomic experiences, injecting a vibrant economic and cultural energy throughout the capital.
