A Danish restaurateur who has spent over a decade in Lithuania says the Baltic states should unite and create a New Baltic Cuisine. He says a similar strategy put Denmark at the top of the global gastronomic scene 20 years ago: “Before that, we ate very, very badly.”
Niels Peter Pretzmann first bought premises at 14 Trakų Street in Vilnius more than a decade ago and opened the Dublis restaurant there. He later founded other well-known establishments recognised by the Michelin Guide: Red Brick, Nineteen18, 14Horses and Deep Roots.
He also founded the Senatorių Pasažas complex and runs the 600-hectare organic Farmers Circle farm near Ukmergė.
In an interview with LRT.lt, Pretzmann talks about planned changes to his restaurants, the threat from Russia and his ambition to create a New Baltic Cuisine.
I would say you are making gastronomic history in Lithuania. How does the industry view you? Is there resentment – a Dane came here and is setting the trends – or are people grateful?
I cannot say whether anyone is jealous, but I think I have good relationships with people in the industry.
